Chickpea, Feta and Herb Salad

If possible, try to find sheeps milk feta cheese - a salty slightyly acid flavour which combines deliciously with creamy chickpeas. Served with a handful of fresh green leaves as a quick tasty lunch for 2 or enough as an accompaniment for 4.

  • 400 g can chickpeas, drained
  • chopped coriander
  • snipped chives
  • juice of 1 lime
  • salt and black pepper
  • sprinkle of lemon infused oil
  • 100 g feta cheese - sheeps milk if possible
  • sprinkle of smoked paprika (optional)

Chickpea, Feta and Herb Salad Directions

  1. Combine the chickpeas with the herbs, lime juice and seasoning. Crumble over the feta cheese and top with a sprinkle of smoked paprika. Serve chilled.
