Fennel & Nigella Seed 'Umami' Rub

Description

 

With the addition of Taste No5 Umami Paste, this fresh, tasty rub is delicious with pork. Combine the ingredients and thoroughly massage over the meat before slamming it into a moderate oven (180C) for about an hour or until the juices run clear. Do allow it to rest for about 10 minutes before serving, producing wonderfully succulent roast pork.

Method

 

Using a mortar and pestle, lightly grind the fennel and nigella seeds together. Add the remaining ingredients then rub all over the pork - the easiest way to do this is by using your hands.
