| Zesty, Buttermilk Ranch Dressing |  | A salad just isn't complete without a decent dressing but, mayonnaise aside (I thoroughly enjoy Maille's) I have yet to find a ready prepared version to live up to it's marketing promises. Vinaigrette can be acidic and often the creamy sorts simply taste synthetic. Such expectations are problematic – what to do in a hurry? Life was transformed by the popularity of atomisers for oils and vinegars; a fine mist of both does the trick but, I'm continually searching for new ideas and flavours.

| | Warm Salad of Smoked Haddock | No matter the weather or season I enjoy eating salad. Not a plate of limp leaves with half-a-tomato and slices of cucumber but something vibrant: bursting with colour and energy. My current favourite leaves are handfuls of peppery rocket, simply garnished with shavings of Parmesan and dressed in a fine mist of balsamic vinegar. Balsamic is naturally sweet so obliterates requirement for oil and beautifully balances the salt of the Parmesan. Figs and crushed walnuts combine elegantly with rocket as does crumbled blue cheese with slivers of hard pear or even... smoked haddock with cranberries.

| | Umami - The 5th Taste Sensation |  | Taste is our ability to detect flavour in food, the four basic sensations being: sweet, sour, salt and bitter. though first described in 1908, umami, the Japanese loanword for savoriness has only gained recent attention as our fifth basic taste, but anyone who cooks will already be aware of this important element. This is the taste which adds roundness and savoury depth to a finished dish...that flavour which we often search for. It tasted delicious but there is 'something' missing...

| | What To Eat Now | A grand oddesy of seasonal eating, What To Eat Now offers more than 100 autumn and winter dishes which includes favourites from the accompanying BBC TV series. Valentine Warner, aptly described as cook, forager, fisherman and culinary adventurer presents witty sketches and prose to accompany his vibrant, mouthwatering recipes. Raised on a farm in Dorset, where he learned to fish, shoot and cook; good food always being a central force in his life. Interestingly, Valentine had decided on a different career path, studying an art foundation course in Bath followed by a sojourn to London to study as a portrait painter at the Byam Shaw School of Art. Though a successful artist, the call of the kitchen was irristiatable and the ensuing years saw him working alongside chefs such as Rose Carrarini (Rose Bakery in Paris) and the legendary Alistair Little.

| | Essential Winetasting |  | I couldn't wait to review Michael Schuster's new book on wine tasting and knew intuitively that I wouldn't be disappointed. After all, he is the one of the world's leading wine gurus and winner of a multitude of prestigious prizes and accolades. With book in hand, I curled up in my favourite chair with an appropriate glass in tow and plunged into that beguiling world of wine, inspired and encouraged by Michael's excellent handbook. Going through all his very easily explained and user-friendly notes and thanks to his matter-of-fact, no nonsense style, I was spellbound and, a few hours later – and a few glasses down the line - emerged convinced that this is the modern day bible in wine tasting and the must-have book on everybody's wish list for Christmas 2009. Try though I did to catch him out – said she modestly – I scored no brownie points there but certainly gained many on my own personal list of wine tasting skills.
