Parsnip Puree

A flavoursome alternative to mashed potato. This parsnip puree is great to serve with winter casseroles.

  • 2 parsnips, peeled and roughly chunked
  • knob of butter
  • 4 generous tablespoons of creme fraiche
  • sea salt & white pepper

Parsnip Puree Directions

  1. Either steam the parsnips for about 10 minutes or microwave on full power until tender. Cool slightly then add the butter and cream. Blend until smooth using either a hand blender or food processor. Season to taste, reheat and serve.
