Cheats Mincemeat Directions
1. Tip the contents of the jar of mincemeat into a medium mixing bowl. Peel and coarsely grate the apples, add to the mincemeat. Mix in the dried, chopped fruit.
3. Add a good slug of whichever liquor you decide to use and mix well. Cover and leave for a couple of hours then re-check its consistency. The fruit will have absorbed some of the liquor, so you may need to add a little more.
4. Re-pot in clean, sterile jars(*). You will probably have about double the quantity you began with.
* to sterilise jars, wash the jars in soapy water then place in a preheated cool oven (130 degrees C) for 15-20 minutes
