A Marinade and A SprinkleHot humid weather demands quick food bursting with colour and flavour. Slaving in the kitchen isn't an option, nor is standing close to an even hotter BBQ. What then to prepare?  Bavette (skirt / flank) steak is a tasty, popular choice in France. A cheaper cut of meat, it benefits from the least possible cooking time – try rare or medium but beware, it will toughen horribly if well done. This is an ideal cut to marinate, the marinade both flavouring and tenderizing the meat.

This title might puzzle the reader but as I reveal that this wonderful, ethereal wine, Savennieres, comes from the Loire Valley, home to a bountiful number of royal residences, it is no wonder that Louis XIV, apparently, went into rhapsodies about it while Napoleon, almost a century later ordered it as his house wine. Both aristocratic recommendations embellish an already noble picture of a majestic wine still heralded by some of today's very influential wine connaisseurs as being one of the five best white wines of France. Now, that brought you back to your oenological senses didn't it? I can see you now, dear reader, trying to find the four others which, yes, are not difficult to imagine. However, take a closer look at this fifth wine, more esoteric, ignored by a great many, revered by very few. Read on…..

Teresa, who along with being a writer, also runs a guest house which is aptly named the Quiet Place. Paradoxically, Teresa explains that there is no such thing as 'typical' Israeli food but it is the manifestation of the colourful tapestry of nations and their rich cultures. Because of its geographic location, the cuisine of the Middle East tempers a strong influence but co-exists in harmony with the strong Jewish traditions of Eastern Europe and the Mediterranean.
